Rainbow Hash

Well, if you’ve been reading this blog for the past few months, you know I like to try different hash recipes for dinner.

This week?

A little creation I like to call Rainbow Hash.

See? All sorts of bright colors in there!

Again, it’s super easy and budget friendly…as usual.

Rainbow Hash

4-5 medium sized sweet potatoes, peeled and diced into 1/2 inch pieces

1 large red onion

about 6 green onions

1 large red bell pepper

1 lb of spinach

4-5 tablespoons of coconut oil

2 tablespoons of paprika (I may have used a bit more, but I also used my hand as a measuring spoon)

1 package chicken/turkey/pork/soy sausage of your choice–of course, this is optional

Melt coconut oil in a large pan over medium-high heat. Add all veggies (except spinach) and cook until softened–since I reheat mine for dinner all week, I don’t cook the potatoes until they are fork tender, so they don’t get all mushy when I reheat it.  Add spinach and cook until wilted. Sprinkle in paprika and stir.  Cook sausage according to package, slice into little rounds and stir into hash.
